Momos 101: Six Styles on the IndoCave Menu
Momos are simple in idea: a hand-pleated wrapper around a seasoned filling, steamed and served. The variety comes from what happens after the steamer — what they're tossed in, soaked in, fried in, or paired with. Here are the six on our menu and how to choose between them.
1. Steamed Momos
The classic. Ten hand-pleated dumplings, steamed to order, served dry with our house chutney for dipping. Available in chicken or vegetarian. If you've never had momos before, this is the entry point.
Order if: you want the original; you want to taste the wrapper and the filling without sauce dressing them up.
2. Jhol Momos
Steamed momos in a warm, spiced tomato-sesame broth — "jhol" being the Nepali word for broth. Comfort food, especially on a rainy night. Read our jhol momo guide →
Order if: you want soup and dumplings in the same bowl; it's cold; you've had a long day.
3. Chilli Momos
Steamed momos tossed Indo-Chinese style in our house chilli sauce — capsicum, onion, soy, vinegar, green chilli. The momos pick up a glaze and a kick. Available in chicken or vegetarian.
Order if: you want bold heat; you can't decide between momos and Indo-Chinese.
4. Schezwan Momos
Steamed momos tossed in our house schezwan paste — sharper, more pungent and dominated by Sichuan-style red chilli. Different from chilli momos: tighter, hotter, more aromatic.
Order if: you want a heat that builds; you like sharp, dry-spiced flavour over saucy.
5. Pan-Fried Chilli Momos
Same as chilli momos, but the momos are first crisped in the wok before the chilli sauce hits. The result: chewy interior, crispy edges, full chilli toss. Crowd-pleaser.
Order if: you want texture; you want the dumpling and the spring roll energy in one bite.
6. Pan-Fried Schezwan (special order)
Same idea as #5 but with our schezwan paste instead of chilli sauce. Ask when you order — we'll do it.
So which do you order?
- First time? Steamed.
- Cold and tired? Jhol.
- Want big flavour? Chilli or Schezwan.
- Want texture? Pan-Fried Chilli.
