What Indo-Chinese cuisine is

Indo-Chinese is the street-food fusion that emerged in 1970s Kolkata when Hakka Chinese immigrant cooks rewired Cantonese stir-fry technique with Indian spice. The result is its own cuisine — soy and vinegar pulled into garam-masala-adjacent territory, wok-fired with green chilli, ginger, garlic and capsicum.

It's bold, it's snappy, it travels well in a takeout container. Most importantly: it's the kind of food you crave specifically. People don't search for "stir fry near me" — they search for chilli chicken.

What's the difference between Indo-Chinese and Chinese food?

Indo-Chinese uses the Chinese stir-fry technique but layers in Indian spices, ginger and green chilli. Soy and vinegar still anchor the flavour, but the heat is bigger and the aroma is closer to a North Indian kitchen than a Cantonese one.

Is Indo-Chinese vegetarian-friendly?
